Meal Ideas!

Figured 2014 would be a good time to start sharing some meal/snack/drink recipes and ideas. I see a lot of people struggle finding time to cook, and remembering to make lunches, etc.

For example, Wal Mart has these at $1 a piece. "Expensive" in terms of rice, but not in terms of lunch costs eating out.

2 cups of brown rice per bag, 4 minutes to cook.

This is another staple in my work freezer:

Pre-cooked chicken breast

And I keep a big bag of frozen veggies as well.
That's what makes up MOST of my lunches. Easy, fairly cheap, and nutritional.

Drop that chicken in a cup of noodles. Or just boil the noodles, drain and put soy sauce or teriyaki on it
I work late a few nights a week so on the days I'm off at a decent time I usually just cook/grill a good amount of food and have 2 days worth.
I'm always busy and usually don't eat until the evening so I'm no pro on "on the go" type of meals

Crock pot has been our best friend lately. Weve also been on a cream cheese and rotel kick. I usually get dinner and a snack or 2 for the next day out of this

Half bag chicken breast, 1 can corn, 1 can drained black beans, 1 can rotel, 1 bar cream cheese, 2 cups cooked rice, 1 pack taco seasoning. Let it cook on high in the crock pot until the chicken falls apart. Eat with chips or put it in a tortilla with a ton of cheese

Dice up half bag of chicken and cook it in a skillet. Add corn, black beans, fajita seasoning, 2 cups cooked rice, tomato paste, 1 stick cream cheese. Mix it all up. Hollow out some bell peppers, fill them with your concoction of shit, place in crock pot and smother with a fuckload of cheddar cheese. Cook on low a few hours in the crock, pot and eat with chips or regular

Fucked up "spaghetti"
Dice up and cook half a bag of chicken in the skillet. Add a jar of spaghetti sauce, 1 stick cream cheese, 1 can rotel, salt, pepper, cayanne pepper, Italian seasoning, rosemary leaves, red pepper flakes. Eye ball that shit and pour over a giant bowl of pasta of your choice.
